Nutty Granola for Breakfast
Breakfast is my favourite meal of the day - I am not one of those people who ‘forgets to eat’ until mid morning or even lunchtime! I need to eat fairly soon after I wake up or I am a little, shall we say, grouchy!
So, on those busy weekday mornings I like to have something to hand that is both nutritious and delicious. Now, this doesn’t happen every Sunday, because life gets in the way, but when I can I like to make a big batch of Nutty Granola for the week ahead. I can then have this with some kind of milk or I can throw it in a jar and have with yogurt for when I eat breakfast on the run (I know, I know, we shouldn’t do this, but you know, life!).
I would like to pretend this recipe is mine but it isn’t. Its a version of a guy called Andrew Cooper’s recipe who is AKA Juiceman. He puts goji berries in his but I don’t as I am not a fan but you could throw in a handful if you liked.
So you need:
5 medjool dates
1 tbsp coconut oil
200g porridge oats
2 tbsp maple syrup
150g mixed nuts, broken up (putting them in a tea towel and bashing with a rolling pin is a pretty satisfying way of breaking them up!)
a pinch of vanilla powder
a pinch of ground cinnamon
1 tbsp pumpkin seeds
1 tbsp flaxseeds (I used ground ones as that is what I had in the cupboard!)
Blitz the dates and coconut oil in a blender to make a paste. Combine the rest of the ingredients in a bowl and then mix in the date paste. Spread evenly on a baking tray lined with baking parchment and pop in the oven for 30-40 minutes at 180 degrees C. Now, you MUST WATCH IT LIKE A HAWK! I tend to set the timer for 10 minute intervals and give it a good mix around to stop it from burning. It burns really quickly. I have burnt it many many times!!
This is a good breakfast, it’s not too sweet, and you get plenty of benefits from the nuts and seeds. The oats will help keep you full. The breakfast is full of fibre and a bit of protein as well. So all in all it’s win win!
